4 Ingredient Pesto Vinaigrette
Incredibly simple to make, 4-ingredient pesto vinaigrette uses our Celery Pesto, lemon juice, olive oil and grated cheese. This vinaigrette will liven up any dish.
Ingredients
- ¼ cup Country Gourmet Herbs Celery Pesto
- 1½ tablespoons lemon juice
- ½ cup extra virgin olive oil
- ¼ teaspoon kosher salt
- 2 tablespoons grated Parmesan cheese
Instructions
- Whisk pesto, lemon juice, olive oil and salt in a bowl or shake vigorously in a Mason jar.
- Combine until the salt dissolves and all the ingredients are combined.
- Add grated Parmesan cheese.
- Taste and add additional salt, if desired.
- Store, refrigerated, for up to 5 days. To use, allow to come to room temperature, and shake well to recombine.
Options
Red wine vinegar or balsamic vinegar may be used in place of lemon juice. The vinaigrette is wonderful over a crisp lettuce leaf salad or as a dressing to drizzle over vegetables.
