Purple Sage Pesto from Country Gourmet Herbs in Madison, Wisconsin. No chemical preservatives are used in the production, and herbs are grown without the use of pesticides. You will need about half to a third of the amount as other brands.  Country Gourmet Pesto is also frozen to preserve its fresh herbal flavor and color.  You are going to love how it takes everyday menu items from so-so to WOW! 

Purple sage pairs well with poultry and pork. Try this: Use Purple Sage Pesto as a rub on chicken prior to oven baking or on the grill. It will help crisp the skin and add a wonderful flavor and enticing aroma as it is served. Who doesn’t love stuffed pork chops? Make your favorite stuffing and add Purple Sage Pesto instead of a dried variety. It’s amazing! It brings the flavor of the sage along with a hint of walnuts and cheese. Need a compound butter? Place softened butter in your food processor, add Pesto to taste and combine. Remove from the processor and place on a sheet of cellophane.  Using the cellophane, roll the butter into a tube and place it in the freezer. It is also wonderful as a topping for veggies. Adding sage to a dish is a great way to enhance flavor without adding extra calories!  

Need a quick and amazing hors d’oeuvre? In a serving dish, place pesto along with additional Extra Virgin Olive Oil to taste. Stir well to combine the two ingredients. Grate and sprinkle additional Parmesan cheese over the mixture. Cut up small squares of your favorite crusty bread and serve for dipping. Open a bottle of wine and enjoy!

 

Pesto Butter

Pesto Butter is one of my go to recipes.  It is quick, versatile and so flavorful.  I use it to top vegetables, as a spread for breads and rolls, topper for pork chops, burgers and steaks and so much more.  I make several  different flavors and freeze them to always have some on hand.

Ingredients

  • 1 stick of softened butter
  • ¼ cup of Country Gourmet Herb Pesto (Our product is concentrated so a little goes a long way) Try using any one of our offerings: Sage, Chive and Parsley, Celery or Parsley.             

Instructions

  1. Combine the softened butter and pesto into a mixing bowl. Using a fork, mix together well.
  2. Spoon the pesto butter onto a sheet of plastic wrap. Use the plastic wrap to move it back and forth until it forms a log shape, then roll it up in the plastic wrap. Tuck the ends under to secure your pesto butter. 
  3. Place the butter in the fridge for 1-2 hours before using or freeze for up to 3 months.

Tip: When frozen solid, slice into disks and freeze those so you can use as much or as little at a time as you need.  

Options To Add:                                                                                      

  • ¼ cup grated Parmesan cheese
  • 1-2 medium cloves garlic, minced

This makes a fantastic garlic butter.
